Gentle handling is key to delivering artisan-style bakery perfection

There is nothing like the unique textures, flavours and visual appeal of artisan-style baking. However, replicating traditional manual artisan baking methods whilst scaling up production is a delicate and challenging process. A critical aspect of being able to deliver the delicate structure and ‘open texture’ that consumers are looking for is to ensure the gentle treatment of the dough. If handled correctly, large bubbles – created during dough fermentation – are not damaged, preventing de-gassing of the dough, and maintaining that characteristic sought after texture. Thankfully, longstanding EPP partner Koenig has a host of automated dough dividing solutions which assure this gentle handling, providing bakers with versatility, flexibility and reliability to produce quality artisan products at scale.

The Koenig Artisan SFM EC is a dough sheeting system capable of handling a wide range of products, including seeded and fruited doughs. It can produce an array of different shapes– squares, triangles, baguettes, rounded products – all on a single machine. Its highly efficient design allows for the handling of up to16,200 (square) and 11,800 (round) pieces per hour. It is also easy to clean, offers quick changeover, and its optional retracting unit carefully loads dough pieces directly onto baking trays.

The Koenig Ceres 2.2 meets bakers demands for gentle dough handling, dough yield and excellent weight accuracy.  The line is suited to doughs with long resting times with a large 300L funnel inner cone providing the perfect space for the gently handling and distribution of dough required for artisan baking. It is also, simple to clean and robust, with the ability to deliver dough pieces in the range of 100 to 2,000 grammes. It offers bakers versatility in a small space, handling wheat breads, pure rye breads, inclusions and Mediterranean breads. Thus capable of producing baguettes, ciabatta, white breads, panettone or flatbreads. The dough discharge can be linked directly to a worktable for hand finishing and further processing.
