Wong Wong Bakery has installed a two pocket Koenig Mini Rex dough divider and rounder,supplied and installed from European Process Plant Ltd (EPP), to simplify processes and aid productivity of its Chinese buns. With all baked goods created on site, Wong Wong Bakery cater to in-store customers as well as Chinese supermarkets through wholesaling.
Established in the heart of Chinatown in Manchester, Wong Wong Bakery has been serving customers for over 20 years with decorative cakes and an assortment of sweet and savoury buns using authentic flavours, such as roast pork and black sesame. The buns are baked following a traditional Chinese recipe, providing a unique light, soft texture.
As a family business, Wong Wong Bakery employ and serve much of the Chinese community in Manchester. Lin Chan, the manager, comments, “We previously used an older piece of equipment from a Taiwanese manufacturer. The size of dough it produced wasn’t the size that we needed, and it didn’t produce neat round individual pieces. We were aware of the benefits of a Koenig Mini Rex and since its installation, have been extremely impressed by the consistency in product sizing, ease of use and increased productivity which the machinery has contributed to.”The consistent product sizing has enabled Wong Wong Bakery to remove the duty of not having to cut up the dough themselves, and refocus duties to other areas in production, simplifying the processes and contributing to improved quality of the buns.
